Pumpkins are incredibly rich with nutrition. They are one of the vegetables
which is very low calories; and
contains no saturated fats or cholesterol; but are rich source of
dietary fiber, anti-oxidants, minerals, vitamins.
Pumpkins can be used in variety of delicious recipes either baked, stew fried; but eaten best by steam cooking in order to get maximum nutrients.
Here, i would like to share with you my delicious and easy to prepare pumpkin soup.
INGREDIENTS
Pumpkins (quarter slice of medium sized pumpkin)
Dried red dates (approx 8 - 10 pcs)
Dried baby scallops (approx 1/4 hands full)
Dried cuttle fish (2 - 3 pcs)
Chicken meat (either chicken breasts or cut chicken pieces)
Water
Seasonings :
Salt to taste
Soya sauce - 2 tablespoon
pepper to taste
Optional : spring onion to garnish
METHOD
1. Clean and remove pumpkin skin and seeds
2. Scald chicken meat in boiling water and place all ingredients into pot.
3. Bring it to boil and transfer to slow cooker for 1 - 2 hours.
4. Add seasonings
5. You may add garnishing :- spring onion (optional)
6. Soup is ready to serve
